IMBB 24 : Make it in 30 Minutes

I am hungry, but lazy, the perfect excuse to take part in IMBB 24: Make it in 30 minutes. The challenge is to make a complete meal from scratch, with raw ingredients, into something good to satisfy that hunger. What I have chosen is really simple to make. I was eating in 20 minutes!

Presenting the mushroom-leek omelette sandwich lunch.

A leek (sliced diagonally), together with a large piece of shiitake mushroom, (chopped roughly), combined with a well-beaten egg (seasoned with soy sauce and black pepper). This mixture is poured into a small non-stick pan and cooked on slow heat until both sides are browned.

While the omelette is cooking, get 2 slices of bread (I used wholemeal) and toast it lightly. Then spread mustard on one and mayo on the other. When the omelette is done, sandwich it between your bread and cut diagonally and get ready to chomp down. How's that for a lazy girl on a saturday lunch?

Technically, this simple sandwich could take a whole lot longer than 30 minutes if I baked my own bread but I cheated and used store-bought bread. But if you chose my second option, which is to eat it with rice, you can stilll make the 30 minutes requirement by cooking the rice in a rice-cooker simultaneously while making the omelette.

With the main course out of the way, make way for dessert! What could be more simple than a piece of fresh fruit? It's fresh slices of guava for me.

Burp! I'm full now.
