With the premium tag, I would have expected more sushi, or correspondingly, more premium neta (sushi toppings). Perhaps it is a sign of frequent indulgence, but I was actually not too far off! In fact, I got both the Qs - quality and quantity.
In the 10 pieces of mixed nigiri and gunkan sushi, I got to savour uni, ikura, otoro and chutoro. Everything tasted fresh, although some might have appeared a little dubious. The sushi rice's flavour was well-balanced and did not overwhelm the neta's own taste. Each piece was also made in a convenient one-mouthful size.
The maki roll was not spared of an upgrade either. It was really a pleasant surprise to see the apprentice chef start mincing otoro with spring onions on the spot to make the negi-toro maki.
Nakasei surprised me further with the use of fresh wasabi. But as much as the wasabi lover as I am, the chef was a little too liberal with the use inside the sushi. My nose cleared with each piece so I definitely would tell chef to go light on that green stuff in future.
I must add that I liked the tamago here as it was not overly sweet and had good texture. A standard miso tofu wakame soup was served together with lunch and I ended with a scoop of peach sorbet that was unmemorable. But overall, it was one satisfying lunch.
