Carrot Cake with Vanilla Cream Cheese Frosting

I had the honor of baking a birthday cake for my mother's friend. The request was a carrot cake so that was what I made. I skinned my finger while grating the carrots but the cake turned out lovely so the pain was worth it.

The final product was truely rustic - haphazard method of creaming plus the unconventional brown-colored frosting. I loved it!
